Ingredients:
5 skinless boneless chicken breast -- cooked
1 cup onions -- chopped
1 cup celery -- chopped
Cooked chopped bacon as you like
1 pint heavy whipping cream
1 teaspoon minced garlic
3 cans chicken broth -- (3 to 4)
1 1/2 teaspoons fennel seed
1 1/4 cup chopped cilantro
1 can chopped artichoke hearts
2 tablespoons capers -- or more
2 cups kale -- cut in half, then sliced
How to Prepare:
This recipe is mostly low carb and can be varied according to your
needs and taste. It is very meaty and rich. Try several different
versions with different meat and vegetables. Adjust the heat as
needed throughout the recipe to keep it simmering but don't let it get dry and burnt.
It is best to prepare the meat first so you are ready when the time
is right. I like to grill up several boneless and skinless chicken
breasts and a few green onions for a smoky flavor as the main
ingredient. Start with a large pot. Put in enough olive oil and/or butter to cover the bottom and heat. Next add chopped onion
and celery stalks. Let this cook until translucent. Then add
seasonings like dried or fresh rosemary and cilantro, and parsley.
Then add some dried fennel seeds. Amounts as you wish.
Next add about as much chopped up and fried bacon as you desire. I
like to buy the pre-cooked packages at the store. Let is cook over a
medium heat. Add the meat (chicken in this case). Then put in about
a cup of white or red wine. Next add two to four ca
ns of chicken broth and let it simmer some more. Last, you can pour
in a pint of heavy cream and stir it in. I like to chop up some
fresh kale or other greens into bite sized pieces and throw them in
last then turn off the heat. You can use Italian sausage instead of chicken
and I've also tried chopped up lamb or beef
with good results. Again, adjust to your own diet or taste. I've
added a small amount of capers and a can of artichoke hearts (chop
the artichoke hearts into big chunks)

Bite-Size Crustless Quiche

Carbs Per Serving : trace
Prep Time: ten minutes
Effort: Easy


Ingredients:
1 tbs butter or margarine
1/2 C. finely chopped red bell pepper
1/4 C. chopped green onions (white and green parts)
3 large eggs2 tbs of milk
2 oz chedder cheese coarsely grated (1/2 Cup)
1/4 tsp. salt
1/8 tsp ground black pepper
How to Prepare:
1~Preheat oven to 425. Grease one tray of 24 mini-muffin pan cups.
In a small saucepan melt butter over moderate heat. Add bell pepper
and onion; saute' until soft, about five minutes. Remove the pan
from the heat and let the mixture cool slightly.
2~In medium size bowl, combine eggs, cheese, salt and pepper. Stir
in the bell peppers and onions. Spoon about a tablespoon of the
mixture into each muffin cup (The mixture will fill 18-22 cups.)
3~Bake until centers are set, 8-10 minutes. Let the quiche cool for
1 minute. using a knife, loosen the quiches around the edges and
remove from the cups. Arrange them on platter and serve.

Mussels

Serves: 1 Carbs Per Serving : 4 Prep Time: 10 mins Effort: Easy

Ingredients:
2 Pounds of Mussels 1 tbls spoon of butter
squeeze of lemon or lime 2 cloves of Garlic minced
How to Prepare:
Sort your Mussles, If a Mussle is wide open it is bad and must be
tossed, a little open is ok.. if you squeeze it shut and it stays
shut.. To steam your mussels you just put a little water in a big
pot and bring it to a boil dump in the mussels and cover for about
2-5 mins, they are done when they are wide open and white/solid
looking on the inside. Remove mussels from heat and start pulling
them from thier shells. remove any debris like seaweed or whatever
that might be inside.. in a bowl melt the butter and garlic in the
microwave for 45 secs pour over your mussels squeeze a little juice
on em and ENJOY!!!

Nut Logs

 Serves: 10 - 15
Carbs Per Serving : entire recipe is about 28 carbs,2.5 carbs per log
Prep Time: 15 mins Effort: Easy


Ingredients:
1 8 oz package of cream cheese
1 cup slice almonds1 1/2 tsps of Cinnamon
5 Splenda packets
How to Prepare:
Lay almonds slices on a cookie sheet and toast in a 350 degree oven
for 5-7 mins. Remove and let cool. combine almonds, cinnamon and
splenda in a bowl and mix well. Using a melon baller or small spoon
take a glob of cream cheese and roll it in the dry mix, pressing the
almonds in until they stick and glob is completely covered... store
in refidgerator in a tight container or covered in plastic wrap.. 1
pack of cheese makes about 10-15 snacks depending on how big you
make em.. You could also make a large nut log for the holidays by
adding the sweetner and cinnamon to the cream cheese and just
covering the whole lump in the nuts and then just slice it to serveit!

Sisters' latest cookbook full of healthy recipes

A light-hearted approach to a heavy subject is behind "Eat, Shrink & Be Merry," a new cookbook by Canadian sisters Janet and Greta Podleski.
"We don't teach people how to diet, we teach them how to eat," said Greta Podleski from her office in Kitchener, Ontario, an hour west of Toronto.
The colorful cookbook (Granet Publishing) is a combination of healthy recipes, cartoons and lots of nutrition information sprinkled throughout, great for this time of year with the abundance of New Year's resolutions.
"You almost get sucked in to reading every word. People say they end up reading it like a novel," Podleski said.
This is the third cookbook for the sisters, who use puns for nearly everything. "Beyond Beleaf" is the name of the chapter for salads. "In Cod We Trust" is a recipe featuring cod with a coating of Special K cereal and various seasonings.
"I think we dream in puns," Podleski said, laughing. "We're very friendly and not preachy."
The result is a growing number of e-mails about the cookbooks being life-changing.
"We hear from people who say they didn't really know where to start or where to turn. A woman wrote that her husband had a heart attack and his doctor recommended our cookbook. Others say they or their spouse lost 50 pounds," she said.
All this is done in a very underhanded manner.
"Husbands will ask their wives to make that three-cheese lasagna, not because they think it is healthy but because it tastes good. People like our recipes because of the flavor, and the nutrition is almost a bonus," she said.
This cookbook contains many favorites, such as chicken pot pie, but without all the fat and carbs and a lot more fiber. None of the recipes call for hard-to-find ingredients.
The sisters have a television program on Canada's food network and are often making recipes and having people try them on camera. In one episode, they had a blind taste test of honey garlic barbecue wings with blue cheese dipping sauce from a wing joint famous for its "high-fat, gut-busting" food. They duplicated the wings and dipping sauce, then asked 20 people to sample.
"Our dish won, 19 to 1," Podleski said.
"We teach people how to use spices and ingredients creatively," she said. "Strict dieting only will backfire in the long run. That's why we picked recipes like lasagna and cheesecake and put a healthy spin on them."

Method: After cutting the bananas, add every ingredient into a blender. Mix them until gets smooth. Serve as a fresh smoothie or refrigerate to have it later at any time of the day.

4. Ginger Peach Passion Recipe

Ingredients: peeled peaches, low-fat vanilla frozen yogurt, mango juice, and grated fresh ginger.

Method: Cut the peaches and add all ingredients in the blender. Mix well until gets smooth. You can have it as fresh smoothie and refrigerate the leftover. However, make sure that you consume the whole smoothie on the same day.

5. Crunchy Pear Salad Recipe

Hot off the Grill: Healthy Recipes for a Summer Barbecue

Skirt Steak with Chimichurri Sauce

Makes: 4 servings
Prep: 15 minutes
Marinate: 4 hours
Grill: 8 minutes

Ingredients
3 garlic cloves, peeled
1 large jalapeno chili, seeded and with white ribs removed
3/4 cup packed flat-leaf parsley leaves
1/4 cup packed fresh oregano leaves
1/4 cup extra virgin olive oil
3 tablespoons sherry vinegar
2 teaspoons lemon juice
1/4 teaspoon salt
1/2 teaspoon black pepper
1 pound skirt steak
1/2 cup barley
2 cups chicken broth
3/4 cup frozen peas, thawed
1 jar (2 ounces) diced pimientos
1 teaspoon chopped fresh oregano

Directions
1. For sauce, pulse garlic and jalapeno in a food processor until finely chopped. Add parsley and oregano leaves; pulse until coarsely chopped. Add next 4 ingredients and 1/4 teaspoon pepper; pulse until uniform.

2. In a resealable plastic bag, combine skirt steak and 1/4 cup of the chimichurri sauce. Seal; shake to coat. Refrigerate for 4 hours. Cover and refrigerate remaining sauce.

3. In a pot, combine barley and broth; simmer, covered, for 20 minutes. Stir in peas, pimientos, chopped oregano, 2 tablespoons of the chimichurri sauce, and the remaining pepper. Let stand, covered, for 5 minutes.

4. Grill steak over hot coals for 3 to 4 minutes per side. Let rest 5 minutes; slice thinly. Serve with barley pilaf and remaining sauce.

Nutrition facts per serving: 458 calories, 27g protein, 28g carbohydrate, 26g fat (11g saturated), 6g fiber

Healthy Recipes - Golden Eye Lasagna

My Husband Nathan is a very good healthy recipes cook. He loves to create food dishes. I want others to experience and reap the benefits.

This dish for him was not hard at all.I ask him to cook a dish for my Job ; we were having a bring in a cover dish day ; but it had to be something healthy. And he did it.

Everyone really enjoyed it . It was different all around, the taste , appearance,texture etc...So I decided to send this recipe in.

This recipe call for you to shop for the following items,salad section for the market first.

1 bag of fresh Spinach
3 bunches of Green Onions
1 pack of 4 tomatoes
5 stalks of Zucchini
4 stalks of Squash
1 package of Golden Roasted Almonds
1 seeet Onion
1 bottle of Olive Oil, re. or lite about a 8oz. bottle
1 jar of Mango and Pineapple Chutney
1 can of Black Beans
1 large box of Lasagna
2 packages of Kraft 3 white cheese
1 lb. of kraft mild chedder cheese
1 large Aluminum Pans

Back at Home

Grab a big deep pot for boiling your lasagna fill pot 3/4 way up with water. Let boil . Place lasagna in boiling water with a tbsp. of olive oil and cook until tender.
(prep for cooking)

Slice up all Zucchini and place in a big bowl of cold water.
Slice up all Squash and place in a big bowl of cold water.
Slice up your Tomatoes.
Slice and chop up your Onion.
Drain Black Beans in a bowl and set aside for now.
Take one large pan and rinse out in your sink. Now pat dry with paper towel.
Open your olive oil and pour just enough to grease bottom of pan good.

Once lasagna is tender, turn off stove and let pot stand. It you have a wooden flat wooden stir, please us it to pick up lasagna.

Create a layer and dash with olive oil over Zucchini lightly.Spread 2 of your sliced Tomatoes over Zucchini.

Sprinkle half of your green onions over the tomatoes.
Sprinkle your black beans out,
Sprinkle 1 package of the cheese until all is covered. Dash some more olive oil on top. Place another layer of pasta on top.
Empty your squash on top of pasta and spread your Chutney out over the squash, Sprinkle your Golden Almonds to cover all.
Take your Spinach ( empty the bag) and cover completely. Take the rest of your green onions along with your sweet onions and sprinkle on top. Spread the last 2 of tomatoes over top with 1 tbsp. more olive oil.
Sprinkle the last bag of cheese to cover lasagna. Place another layer of pasta on top.
Slice up your mild cheese on top. Take 2 pieces of foil and make them one large sheet.Rub back center of foil area with olive oil, to help prevent the cheese from sticking to foil.

Dinner on a Dime

By the end of the day, most students are exhausted and in need of a tasty, easy meal. I know from experience that homework can make it challenging to cook a highly involved meal on weeknights. I also know that choosing whether to eat a Hot Pocket or a can of soup for dinner every night gets old really fast. Believe it or not, it’s actually easy to make a hearty meal with a tight budget and a backpack full of homework.
Most of the recipes I use make about four servings of food. If you just cook for yourself, you’ll probably end up with some leftovers. I would suggest inviting friends or roommates to eat with you, and then make them do the dishes. That’s a fair trade, right? They get food, and you don’t have to clean the kitchen (which is definitely the worst part of the cooking/eating process).
So before I start making you salivate, let me briefly go over some safety issues you should be aware of in the kitchen. (If you are a vegetarian, you can just skip this paragraph.) When you are handling raw meat, you need to be very careful. Make sure you use a plastic cutting board if you need to chop it, and wash your hands with soap before you touch anything else. Cook meat to at least 160 degrees to get rid of any harmful bacteria. Also, please be careful with sharp knives, and make sure your fingers are in the clear when you’re chopping. Telling someone your giant scar is from a cooking accident could be pretty embarrassing.
Now that you know how to safely handle meat, let’s get back to dinner ideas. (Vegetarians, you can tune in now.) One of my favorite things to cook for dinner is stir-fry. It is easy to make, and you can use whatever ingredients you want. Most vegetables taste great stir-fried, making it easy to cook something you will like. Chicken, beef, and tofu are all great in it as well. Cooking it basically just requires you to throw the ingredients in a frying pan (or wok) with oil and let them hang out for a while. If you like more structure, here are a bunch of stir-fry recipes.
If you eat meat, there are several easy recipes you can make with ground beef. (If you aren’t a fan of cows, you can substitute most of these with ground turkey.) Tacos are really easy and cheap. They’re great with ground beef, but you can also use chicken or beans instead. If you want to impress a date, meatloaf is an easy meal you can make with ground beef. Your date won’t have a clue the dish practically made itself.
I realize that macaroni and cheese is a comfort food, and many college students have become completely addicted to it. If you are dying to have some, try making it from scratch instead of a box. It’s healthier, cheaper, and can fill more bellies. I bet you can do a better job than Kraft can, anyway. If you’re feeling fancy, try adding some vegetables or ham to your creation.

Thanks to the internet, not owning a cookbook is no longer a legitimate excuse for eating dinner out of a box.

HEALTHY RECIPES: Roman Tuna Salad


Some supermarkets have a selection of olives in bins or they sell them in plastic containers. The fresh olives taste much better than canned olives. We like Greek Calamata olives for this tuna salad. (Try to buy them without the pits – it’ll save you some work.)

What You'll Need: Serves 4
1/4 cup Nayonaise (soy-mayo from Nasoya)
1 tablespoon each: fresh lemon juice
Extra-virgin olive oil
2 cans (7 ounces each) tuna
1 can (14-ounce) artichoke hearts
1 small red onion
1/4 cup each: chopped black olives
Salt and freshly ground pepper to taste
Chopped Italian (flat leafed) parsley leaves

What You'll Do:

1. In a medium-sized mixing bowl, stir together the nayonaise, lemon juice, and olive oil.
2. Open the can of tuna and the artichokes. Pressing the tuna lid down, drain the tuna liquid into the sink. Carefully remove the sharp lids. Empty the artichokes into a strainer to drain.
3. Add the tuna to the mayo mixture. Break up the tuna with a fork but leave it chunky. If the artichokes aren’t quartered, cut each one into quarters lengthwise. Add to the tuna.
4. Chop the onion and add to the tuna. Using your fingers, pit the olives and chop into large pieces. Finely chop the parsley; adding the olives and parsley to the tuna. Stir; add salt and pepper to taste.

To Serve: For a sandwich, spread onto crusty bread or rolls with some lettuce leaves or by itself on a bed of lettuce.

For your school lunch, pack the tuna in a plastic container and the bread (whole-wheat of course!) in a plastic baggie.

HEALTHY RECIPES: Veggie Wrap

The Wrapper: It’s an 8-10 inch flour, not corn, tortilla that comes in fun colors – red (red pepper or sun-dried tomato), green (spinach), brown (whole-wheat), or plain white.
 
What You Need: Serves 1
 
1 flour tortilla, any variety
2 tablespoons hummus, any flavor
2 tablespoons grated carrot
6 fresh spinach leaves, washed and dried
 
What You'll Do:
 
Lay the tortilla on a piece of foil. Spread the hummus on the tortilla almost up to the edges. Sprinkle the grated carrot over the hummus. Lay the spinach leaves on top. Roll up and cut in half with a serrated knife but don’t cut the foil. Wrap tightly in foil.
 
To Wrap: Place a thin layer(s) of ingredients on the tortilla, leaving a quarter-inch of space around the edges. Roll the wrap up tightly, but not too tightly or the ingredients will ooze out. Use a serrated knife to cut it in half so the tortilla doesn’t tear. Wrap in foil and pack it.
 
Tip: Make up the ingredients the day before and assemble the wrap in the morning. Otherwise, the wrap can get pretty soggy. Ugh!

Whole Wheat Bagel

Prep Time: 3 minutes
Total Time: 3 minutes

½ small whole-wheat bagel
1 tbsp margarine with plant sterol
½ tbsp chopped almonds

1. Mix plant sterol with nuts to make spread.
2. Spread on bagel. Enjoy!

The first thing we should look at is the proportion of different foods kids should eat at any one meal.

Proteins Fill 15% of the plate.

If we fill 15% of the plate then we are giving them enough protein for constant cell rejuvenation.

Healthy recipe: SALAD MADE OF BEETROOT, APPLE & CHEESE

- 1 beetroot
- 2 apples
- 100 gm of cheese
- 200 gm of sour cream
- Parsley, sugar or honey according to taste.

Boil the beet. Peel off the apples. The beet, apples and cheese grate on a large grater, add sour cream and mix carefully. Sprinkle with chopped parsley. Sugar or honey add to taste.

Healthy eating for kids: BEET COOKIES

Beetroot - 3
Flour - 100 gm
Sour cream or cream - 300 gm
Sugar or honey - Tbl spoon.
Vanilla - 0,5 Tbl spoon.
Cinnamon - 0,5 Tbl spoon.
Soda - 0,5 Tbl spoon.

Boil, peel and grate the beet. Mix with sour cream (or cream), cinnamon, vanilla, flour, soda and sugar. Mix together and put for 1 hour in a refrigerator. Dish out with a dessert spoon into a tray into equal portions. Bake cookies in an oven for 20 minutes.

 

Healthy menu for kids: PUMPKIN PIE

- Pumpkin - 400 g
- 3 eggs
- Low-fat cottage cheese - 250 g
- Cheese (like cheddar etc.) - 5 g
- A coriander, a nutmeg, pepper to taste.
Grate pumpkin on a fine grater. Cottage cheese mix up with eggs and pour this mixture in a pumpkin, then add spices and mix all the ingredients properly. The resulted mixture pour into a form greased with vegetable oil, and bake in an oven for 20-25 minutes. Toward the end sprinkle with grated cheese.


Healthy recipes for children: PUMPKIN MEAL

- A pumpkin - 500 g
- Boiled rice - 1 cup
- Raisin - 0,5 cup
- Honey - 2 Tbl spoons
- The crushed walnuts - 2 Tbl spoons.
Cut a pumpkin into cubes, add the boiled rice, the soaked raisin, nuts and honey. Place in an oven in a pot for 10-15 minutes. Instead of raisin one can add/use dried fruits.


Healthy dessert from a PUMPKIN

A pumpkin – 500 g
3 apples
Honey – 2-3 Tbl spoons
Crushed nuts (any nuts) – 2-3 Tbl spoons
 

A healthy recipe to heal avitaminosis (shortage of vitamins)

For the purpose that leaves of a dandelion better digested, pass them through a meat grinder. Wring out juice. Then use regularly 2-3 Tbl table spoons of such juice before meal – it will give to an organism all necessary substance after winter.
 

Healthy cocktail from a dandelion with honey

Leaves of a dandelion chop finely, put in a thermos and fill in with boiled water. In an hour use the received drink with honey and a lemon.

Leaves of a dandelion - 2 bunches
2 cucumbers
Juice of half a lemon
Cream - 3 Tbl spoons
Green onions, fennel, honey - to taste.
Leaves of a young dandelion to wash out and mix with it is thin cut cucumbers. Fill salad with cream with a lemon juice. Add fennel, green onions and honey to taste.

If you want, that the pickled cabbage (sauerkraut) could be stored for long and had excellent taste, when you pickle add mints. Mint - excellent antiseptics.
 

Healthy recipes for kids: MINT BISCUITS (gingerbreads)

Rye flour - 1 cup
Mint - 1 bunch.
Peanut - 0,5 cup
Honey or sugar - 0,5 cup
Juice of half of lemon.
Soak mint in water for two hours. Mill/thrash peanuts on a coffee grinder and mix with flour. Add honey or sugar, lemon juice, fill in with broth of mint and mix properly all. From the resulted mixture mould gingerbreads and bake in an oven on an average heat for 20 minutes.

Mint fresh - 1 bunch.
2 cucumbers
Salt, food ice - to taste.
Cut cucumbers finely, pour leaves of fresh mint and cover with the cubes of a food ice. Then pour small amount cold water (slightly salted).
To taste of cold water.

Soak nettle in boiled water. Finely cut an egg, a potato, an onions and nuts. Add in salad chopped nettle, juice of a lemon and vegetable oil.
 

Healthy vegetable soup:
Russian cabbage soup from a nettle

Nettle - 2 bunches.
2 onions - 2 pieces
2 boiled eggs
Sour cream, salt and pepper - to taste.
Leave nettle in 1 liter of boiled water for 2 hours. Then add finely cut onions and cook for 20 minutes. Serve with eggs and sour cream.


Healthy Soup from a plantain

Plantain - 2 bunches.
White cabbage - 100 g
2 onions
2 carrots
1 apple
Garlic - 2 tiny cloves
Vegetable oil - 2 Tbl spoons
Greens, pepper and salt - to taste.
The onions finely chop and slightly fry on vegetable oil. Then add the chopped carrots and cabbage. Add 1 liter of water and put on a stove for 15 minutes. 5 minutes prior to readiness add in soup finely chopped leaves of a plantain, salt, pepper, greens, crushed garlic, grated apple and vegetable oil.


Healthy Salad from leaves of a plantain

Leaves of a plantain - 2 bunches.
2 onions
2 boiled eggs
Vegetable oil - 3 Tbl spoons
Grated horse-radish - 1 Tbl spoons.
All components of salad chop finely, then add vegetable oil. Salt to taste.

Tuna Salad
Ingredients:1 tin of tuna
low fat Mayonnaise or salad cream
Salad (lettuce, cress, carrots, cucumbers or onions)
Black pepper (optional)
This is very good quick and healthy recipe which is very easy to prepare and will not take up too much time. First, find a decent size bowl which is where the tuna salad will be prepared. Open the tin of tuna, drain the oil, then empty the tuna into the bowl.
Next, open a bottle of mayonnaise or salad cream and pour half of the contents into the bowl of tuna while mixing. Mixing the tuna is important so that the tuna does not end up looking too lumpy.
Wash the lettuce or cucumber in warm water, this is to properly wash off any small insects that may be found while preparing. After washing, put salad into the bowl of tuna and mix. Add black pepper and these you have it……Tuna Salad
Optional ingredients include:

croutons
tomatoes
anchovies
Recipe 2:
Banana and oat Smoothie
